Dark Dark Dark Coconut Oil Sugar-free Chocolate
Ingredients:
4 Tbsp extra virgin coconut oil
10 Tbsp cocoa powder (I use normal hershey's)
3 tsp Truvia (stevia processed by the evil empire to resemble sugar... not sure how much real stevia you'd need)
2 pinches of salt
2 Tbsp HOT water
1 tsp flavor extract of your choice (default is vanilla. I have also tried orange, which is excellent. Planning to try almond soon)
Directions:
Melt the coconut oil. (Has a melting point of 76 degrees, so a few seconds in the microwave will work)
Stir in the cocoa powder, combine thoroughly.
In separate bowl, completely dissolve the truvia and salt in the hot water. You don't want any granules floating around.
Add the extract to the water.
Combine the oil mixture with the water mixture and STIR QUICKLY and VIGOROUSLY, as it thickens to a paste very fast.
Compress the paste between layers of wax paper to your desired thickness. I do this in a very small glass casserole dish to keep the edges relatively square.
Place your dish or pan in the fridge to let harden for a few hours.
When hard, cut in bars or squares and store in fridge (or freezer if you want a hard snap to it). This chocolate is less sturdy than your traditional stuff made w/ cocoa butter, so it needs to be stored in fridge until you eat it.
For Coffee flavor:
Instead of 2 Tbsp hot water, substitute 3 Tbsp hot espresso
Increase Truvia to 4 tsp.
